Salad - White Bean and Farro


1/2 cup farro
1 15-ounce can cannellini beans, drained and rinsed
1 small shallot, thinly sliced
1/4 cup Maine-ly Drizzle's Extra Virgin Olive Oil of your choice
1/4 cup Maine-ly Drizzle's 25 year aged sherry vinegar
1 teaspoon kosher salt
3/4 teaspoon black pepper
5 ounces baby argula
4 ounces feta cheese, crumbled (about 1 cup)
3 tablespoons chopped fresh dill

1. Cook farro according to package directions. Drain and rinse under cool running water.
2. Toss together farro, beans, shallot, oil, vinegar, salt, and pepper in a large bowl. Let stand 15 minutes.
3. Add arugula and feta and toss to combine. Garnish with dill
