Vegan "Egg" Salad Sandwich with Lemon Green Tahini Dressing

This recipe is courtesy of Dave at Vermont Veggie Burger who by the way makes the best beet and quinoa veggie burgers you have ever tasted.

Now, I am not a vegan and I will never be a vegan (I just love all walks of food...pardon the pun). But this's way easier to make than traditional egg salad because you don't need to boil, cool and then peel eggs. You just open a package of tofu and mix it with our Lemon Green Tahini Dressing, a bit of chopped onion and bam. A good sprinkle of salt and cracked pepper and you're done. You know I have never had tofu in a sandwich and this was pretty good.

Vegan "Egg" Salad Sandwich with Lemon Green Tahini Dressing


Tofu (firm or extra firm) - drain and use a paper towel to gently squeeze the water out. You don't want watery tofu.
Wozz! Lemon Green Tahini Dressing
Chopped Fresh Onion or Green Onion (as much as you want - this is a sandwich I didn't measure)
Good Hearty Sliced Bread


Dice up your tofu and add to a mixing bowl. Add chopped onion and liberally drizzle lemon green tahini over. With a fork mash together (just like when you make egg salad).

Add more Lemon Green Tahini Dressing and salt and pepper until you get the taste you desire.

Make your sandwich. Serve with a pickle.
