Salad European Style

This simple salad is best made on a platter to show off all the wonderful colors. Simply spread a layer of baby greens, followed by finely chopped shallots, marinated red pepper pieces, pumpkin seeds, crumbled feta and chopped black olives.
Sprinkle the whole salad with some pumpkin seed oil, balsamic vinegar and a pinch of salt and pepper to taste.
