Spiced Beet Vinegar
Maine-ly Drizzle Extra Virgin Olive Oil of your choice
Kosher Salt
In a large bowl, add chopped kale, a good drizzle of olive oil, approx 1/4 cup spiced beet vinegar and 1 tsp salt. Massage the olive oil, beet vinegar and salt into the kale. (Use your hands and toss it through well, taste it..if you need to add a bit more spiced beet vinegar then by all means...massaging it into the kale helps the kale soften and wilt so it's not tough) Set aside.
In a grill pan, on high heat, grill each side of halloumi for approx 1 minute on each side.
Arrange kale on large plate, add your sliced blood oranges and grapefruit, add slice onions, add halloumi cheese and serve. It's delicious!
