Kale Citrus Salad with Grilled Halloumi and Spiced Beet Vinegar

It's citrus season and this salad is a bright and fresh alternative to the cold wintery scene that is out my window. If you are looking to get healthy for 2016, this kale citrus salad with grilled halloumi and our spiced beet vinegar is a good start...super healthy but the grilled halloumi cheese let's you ease into healthy without giving up some of the good stuff.

1 Bunch of Kale chopped
1/4 Large Red Onion Sliced Thin
1/2 Grapefruit peeled and sliced
1/2 Blood Orange peeled and slice
8 oz Halloumi Cheese sliced into thick pieces

Spiced Beet Vinegar
Maine-ly Drizzle Extra Virgin Olive Oil of your choice
Kosher Salt

In a large bowl, add chopped kale, a good drizzle of olive oil, approx 1/4 cup spiced beet vinegar and 1 tsp salt. Massage the olive oil, beet vinegar and salt into the kale. (Use your hands and toss it through well, taste it..if you need to add a bit more spiced beet vinegar then by all means...massaging it into the kale helps the kale soften and wilt so it's not tough) Set aside.

In a grill pan, on high heat, grill each side of halloumi for approx 1 minute on each side.

Arrange kale on large plate, add your sliced blood oranges and grapefruit, add slice onions, add halloumi cheese and serve. It's delicious!
