Spicy Home Fries

2 teaspoons Texas Red
2 large red potatoes
1½ tablespoons olive oil
½ Vidalia or other sweet onion, chopped
3 inch piece linguica, chorizo, or cooked Italian sausage, choppedl
Directions:
1. Wash potatoes and remove eyes, but do not peel. Chop into 1” cubes.
2. Heat oil in heavy skillet over medium heat. Add potatoes and cook 20 minutes, stirring occasionally, until soft when pierced with a fork.
3. Add onions, diced linguica, and Texas Red. Cook another 10 minutes, stirring occasionally until heated through and well blended.
Recipe Tip:
For those of you with gluten intolerance, make sure you check whatever sausage you choose, as some are not gluten free.
