Spicy Chicken Stew

2 tablespoons Texas Red
1 ½ pounds boneless chicken breast or thighs
1 medium onion, chopped
1 can diced tomatoes with japalenos (14.5 ounces)
1 can chopped green chilies, undrained (14.5 ounces)
1can pinto beans, rinsed and drained (15 ounces)
1 can kidney beans, rinsed and drained (15 ounces)
Salt and pepper to taste
1. Take 1 tablespoon of Texas Red and coat the chicken, then set chicken aside.
2. Place onion, tomatoes, chilies, and beans in the crock pot. Mix in 1 tablespoon of Texas Red Seasoning. Place chicken on top of the vegetables. Cover and cook on high for 4 hours or low for 8 hours.
3. With two forks, shred the chicken and mix in with the vegetables. Assemble your ingredients to top the stew: chop the cilantro, slice the avocado.
Recipe Tip:
Cilantro, avocado, and sour cream work great as toppers.
