Chunky Chicken Chili

1 tablespoon olive or peanut oil
1 zucchini, sliced
½ sliced red onion
4 ounces sliced button mushrooms
1 pound boneless, skinless chicken breast, cut into 1” cubes
1 can tomato sauce (8 ounces)
1 can corn (11 ounces)
1 teaspoon Worcestershire sauce
1 can red kidney beans (15-19 ounces), drained lightly
sour cream for garnish
Directions:
1. Heat olive oil in a 10-12 inch skillet on medium.
2. Add zucchini, onion, and mushrooms to hot oil and cook for 5 minutes.
3. Add chicken and cook for 6-8 minutes, stirring frequently.
4. Add Kansas City Steak Rub, tomato sauce, beans, corn, and Worcestershire sauce.
5. Turn heat to low and simmer for 15 minutes.
6. Serve over white rice with sour cream as a garnish, if desired.
