Nick's Spinach and Artichoke Dip

  • 1 lb. Spinach, chopped and drained
  • 1 ½ c. Mayonnaise
  • ½ c. Sour Cream
  • 2 ½ c. Artichoke Hearts, ¼ cut
  • 1 c. Parmesan Cheese
  • 2 Tbs. Shallots, minced
  • 1 ½ Tbs. Garlic, minced
  • ½ tsp. Black Pepper

Topping: mixture of Panko bread crumbs, Parmesan, and butter

Directions:

Combine all ingredients and top with mixture of Panko bread crumbs, parmesan cheese, and melted butter (enough to hold together in a ball). Bake at 350 degrees for 3-5 minutes, or until hot and golden brown. Serve with blue corn tortilla chips.
