Smoked Gouda Macaroni Fritter
  • 2 Tbs. Shallots, minced
  • 4 oz. Butter
  • 6 oz. Flour
  • 1 quart Cream
  • 4 oz. Chardonnay
  • 4 oz. Smoked Gouda
  • Salt and Pepper to taste
  • 1 lb. Elbow Macaroni, cooked
  • Toasted Onion Sea Salt to taste

Directions:

Melt butter in saucepan and sauté shallots for 2 minutes. Add flour and cook for 3 more minutes. Add cream and wine. Bring to a boil, then add cheese and simmer for 5 minutes. Season with salt and pepper. Stir in macaroni and chill overnight. Scoop into small balls and bread. Deep fry until golden brown. Season with toasted onion salt.
