Raspberry Cane Sugar

Chef did not provide measurements for this. Add sugar to taste; it should add color to the cream and the raspberry flavor should be apparent, but not overpowering.

Directions:

Place heavy cream into a saucepan with heavy bottom. Bring to a boil, then reduce to simmer. Add Raspberry Cane Sugar and stir until all crystals have dissolved. Cook until the cream thickens by reduction. As cream cools, stir occasionally to prevent skin from forming on top.
