    • Raw salmon
    • 1 c. White Wine
    • 1 qt. Water
    • 1 sm. Onion, or ½ lg. Onion, quartered

leave skin on onion for more flavor

    • 1 stalk Celery, chunked
    • 1 Carrot, peeled and chunked
    • 1 or 2 Bay Leaves
    • 1-2 t. Peppercorns
    • Parsley stems
      Reserve leaves for garnish
    • ½ Lemon, sliced


Add all ingredients, except the wine and salmon. Let simmer until the aroma of ingredient becomes full (Important: Do NOT let this liquid come to a boil at any point!). Add the wine and salmon together. Let simmer for 25 minutes, then remove salmon from liquid. If serving cold, chill uncovered in refrigerator prior to serving.
