Olive Oil Mashed Potatoes

2 lb. Potatoes, cut in large chunks
2 tsp. Maine-ly Drizzle Celtic Sea Salt
1/3 c. Olive Oil (may use flavored oil, such as Maine-ly Drizzle chipotle or garlic, for flavored mashed potatoes)
Salt and pepper to taste


Place potatoes and salt in large pot and cover with water. Cover and bring to boil, then reduce heat slightly and cook 10-15 minutes until tender. Drain, reserving 1 c. cooking liquid if desired for thinning. Add olive oil to cooking pot. Rice potatoes into pot or return cooked potatoes to pot and mash, mixing in cooking liquid or milk to thin as needed. Season to taste with salt and pepper.
