  • 1 pork tenderloin, trimmed
  • 8 sliced Applewood smoked bacon
  • 1 tsp Applewood smoked sea salt
  • Netting (for cooking)
  • Chef’s string
  • Saran wrap


Preheat oven to 350. Sprinkle tenderloin with sea salt and wrap in bacon. Place inside netting and tie. Grill until bacon is crisp, then place in oven until internal temp reaches 155. Remove from oven and let rest for 5 minutes. Remove netting and slice to serve.
