Tuscan Roasted Chicken - Preheat oven to 425°. Wash one whole chicken (use a 5 to 6 lb. roaster)
inside and out and pat dry. Rub 2 to 3 Tbsp. Maine-ly Drizzle Tuscan Herb olive oil all over the chicken and
put one lemon (cut into quarters) inside the stuffing cavity. Place the chicken
in a roasting pan and coat with 2 Tbsp. Maine-ly Drizzle Tuscan Seasoning.
Working with your hands, loosen the skin from the breast rubbing the seasoning
between the skin and the breast meat. Salt the chicken to taste inside and out.
Place a loose sheet of foil on the chicken and cook for 30 minutes. Remove the
foil for the remainder of the cooking time, another 30 minutes. Let the chicken
sit for a few minutes before cutting to serve. When serving spoon some of the
natural juices from the roasting pan onto the sliced chicken.
